The Cassia Tree is an evergreen tree approximately 50 ft in height. It has leathery, stiff elongated leaves. Its bark is steam distilled together with the leaves, stalks, twigs, and waste material of the Cassia tree. The best and most desired bark is collected from a young tree. The Cinnamomum cassia flower is a delicate white with a pale-yellow center, that then produces fruit about the size of a small olive. It is also known as Chinese Cinnamon Oil or Chinese Cassia. Cassia Essential Oil is dark brown in color. It has a strong, spicy, warm and wood-like resinous scent with an intensely sweet, somewhat balsamic-undertone like cinnamon.

Cassia Essential Oils contain hydroxychalcone and similar chemicals. These chemicals are said by some to improve insulin sensitivity. Cassia also contains chemicals that may activate blood proteins increasing blood sugar uptake. Some think this may improve blood sugar control in patients with diabetes.
